Hollywood - The Roosevelt Hollywood is well-known as a hot hangout. Plenty of celebrities come for a beverage or two in the tiny Library Bar off the main lobby. Just don't expect to find ordinary cocktails there. Here's why.

When you hear there's a great new chef in town, you might wonder at which restaurant he or she is so you can try it. Well, in this case, the chef works only at the bar.

I actually have three different colors of currants. Those are clear, dark and red.
Matt Biancaniello is passionate about food, but all of the gorgeous, organic produce he buys is destined not for a gourmet feast... but cocktails like you've never tasted before.
His passion for the best ingredients goes beyond what grows from the ground. In April, he installed a bee hive at his favorite organic farm.
The bartender... now beekeeper... wants the honey that flavors his cocktails to be just right.

Meanging that I could have wildflowers, lavender, purple sage. I could create something that's unique.
Unique like his seasonal cocktails. Here's one that his honey will grace...

Some red rasberries. I'm going to tak a little bit of sage, three-quarters of an ounce of lemon juice. I'm using buckwheat honey... a half ounce there. Fresh ginger juice... one-eighth of an ounce. Then I'll muddle all that up.
Matt adds his cactus-infused tequila, and then shakes it up hard.
This concoction's not done yet. Matt is all about eye appeal and aroma.

I'm trying to have as many different colors and contrast.
But, he'd be no where without that layered and balanced taste... sweet but not cloying... and giving new meaning to "fruit cocktail."
