Woman Fights Foreclosure With Cornbread

(CANVAS STAFF REPORTS) - Tired of being at the mercy of unstable jobs, Beverly Davis decided to bake her own.

If all goes as planned, she will bake herself back into her foreclosed house -- cornbread style.

“On March 2, 2010, the bank foreclosed. In this highly unpleasant situation, something amazing happened -- the Lord blessed me with a creative idea,” Davis writes on her blog . “Suddenly, I had a clear vision of what I needed to do to recover everything: Create a Cornbread Career. Long story short, I did.”

She started making cornbread. She baked cornbread pudding, cornbread fritters, cornbread soufflé, even cornbread with shrimp, sausage and barbecue.

But don’t misunderstand: This Fairburn, Ga., woman considers herself more entrepreneur than chef. She already has around 40 cornbread recipes.

"My goal is to keep building the recipes up so I can create a full cookbook," she tells the Athens Banner-Herald .

For now, her recipes can be found on an e-book titled, "Homegirl's Cornbread Sandwiches: Tasty Recipes & Wise Life Lessons." You’ll find a range of recipes that include the simple "Bev's Yummylicious Cornbread" to intricate recipes like "Cornbread Waffle Pizza" and "Heavenly Honey Cornbread."

Many of her recipes were handed down by her mother and grandmother, she tells the Banner-Herald.

Next week, Davis kicks off a “Cornbread World Tour” – across her home state of Georgia. She plans to share talents – which include motivational speaking and gospel singing -- at restaurants and hotel ballrooms.

She also plans to get her house back at an upcoming auction using money generated by her cornbread business.

Davis says after media coverage of her situation, people have contacted her to say she’s inspired them to keep going, despite their own hardships from lost jobs and homes.

“I’m smarter and wiser now,” she writes. “Everything happens for a reason.”
