Made in Michigan: Morel's Romeo peach gazpacho

Get this recipe courtesy of Matt Prentice and his latest restaurant creation Morels. Located in Farmington Hills, Morels featured a Michigan-based menu and decor.

Ingredients:
8 Romeo Peaches, Peeled & Sliced
1 Red Onion (small), chopped
¼ C Ginger, grated
3 T Vegetable Oil
1 Qt. Orange Juice
¼ C Fresh Lime Juice
¼ C Honey

Garnish:

2 Jalapenos, Fine Diced
½ Red Onion, Fine Diced
½ Red Bell Pepper, Fine Diced
Cilantro, Chopped
Avacado
Salt & White Pepper, To Taste

Directions:
Heat vegetable oil.
Lightly sauté onion, add peaches and ginger.  Sauté for an additional 3 minutes.
Add orange juice and bring to a simmer.
Turn heat down and simmer for 15 minutes.
Blend in VitaMix and strain through fine mesh.
Add lime juice, honey and garnish.
Season with salt and white pepper to taste.
