Traditional Italian Christmas Eve dinner with Joe Aeillo

Get a behind-the-scenes look into chef Joe Aeillo's kitchen as he prepares his traditional Christmas Eve dinner.

Italian families traditionally serve a feast of seven seafood dishes on Christmas Eve. Aeillo let FOX 10 watch as he prepares dinner for 35 of his family members. (We wish he'd adopt us!)

FOX 10's Tom Fergus joins Aeillo as he demonstrates how to make his traditional seafood salad.

Aiello's Frutti di Mare
(Which means Fruits of the Sea)

½ lb Shrimp (21/25 cleaned, deveined & cut into four pieces)
¼ lb Calamari Tubes (Tenticles, optional)
¼ lb Bay Scallops
¼ lb Octopus  (Use only legs, cook whole & then cut)
¼ lb Lump White Crab Meat
¼ lb Lobster
¼ lb Scungili
Cup of extra virgin olive oil
¼ cup fresh squeezed lemon juice
6 cloves chopped finely
¼ cup chopped flat Italian parsley
4 stalks of celery cleaned & chopped thinly
Salt & fresh cracked pepper to taste

Bring large pot of water to a rapid boil.  Boil each fish individually 2- 2 ½  minutes until cooked through. Remove from water & shock under cold running water. Then put in separate bowl.  Repeat this process for each fish.  Cookng times vary slightly so do not cook fish together.   Do not over cook.  When all fish are cooked & cold add, oil, lemon juice, celery, garlic, parsley, salt, pepper & toss thoroughly.  Chill in fridge for 2 hours before serving. Serves 8.
