I Heart St. Regis Drinks and Desserts For Valentine's Day

Valentine's Day comes this Thursday and here with some easy at home drinks and desserts is the team from St. Regis Monarch Beach.

Guests can come celebrate with a five-course meal at Michael Mina's four-star Stonehill Tavern. For $145 per person, they will experience some of Mina's signature dishes like the Maine Lobster Pot Pie, as well as delectable creations from Executive Chef Raj Dixit, including the Wagyu Strip Loin. This menu will exclusively be offered Valentine's Day – February 14th, and 15th with seatings from 5:30-10pm. Another delicious option is the four-course menu at Motif Restaurant. Guests can revel in stunning ocean views as Executive Chef Fredric Castan prepares a delightful menu that will make anyone swoon.This four-course dinner includes your choice of Lobster Ravioli, Braised Short Ribs, or Porcini and Wild Mushroom Risotto. Guests can finish the night with "The Heart" – Chocolate Mousse, Raspberry Sorbet and Caramelized Almonds. This menu is being offered for $105 per person this Valentine's Day, February 14th through Saturday the 16th, seatings from 5:30-9:30pm. Champagne Kiss
2 oz. Ketel One Citron
1 oz. Fresh Lemon Juice
1 oz. Simple Syrup
Fresh Muddled Raspberries
Strawberry Rosebud Jam
Rose Champagne

Kentucky Juice
1 ½ oz. Makers Mark, Bourbon
¾ oz. Cinnamon Simple Syrup
¾ oz. Fresh Lemon Juice
1 tsp. Orange Jam
2 dashes of Regan's Orange Bitters
Combine all ingredients in a shaker, then serve strained in a rocks glass over ice.
Garnish with flamed Orange Peel.

Raspberry Marshmallow
Sugar 5 ounces
Raspberry Puree 3.5 ounces
Honey lavender 4 ounces
Gelatin 0.3 ounces
Cold Water 1.7 ounces

Mix cold water with gelatin, In a pot and a candy thermometer bring sugar, raspberry puree and honey to a boil until it reaches 218f. add gelatin, cool down with a whisk in a kitchenaid bowl. Once cool fill up a piping bag with a round tip medium size, spray lightly with pan coating a plastic sheet. Pipe 2 tear drop next to each other in order to create a heart. Place in the cooler until it firms up

Chocolate Cream
Heavy Cream 7 ounces
Honey lavender 0.4 ounces
Fresh Ginger 0.7 ounces
70% Dark chocolate 2.8 ounces
40% milk chocolate 1.2 ounces
In a pot bring cream honey and sliced fresh ginger, strain and pour over chocolates. Mix and cast in glasses. Lightly bend glasses over in order to create a flower, let it set in the cooler.

Coconut Mousse
Coconut puree 10 ounces
Place coconut puree in ISI bottle with 2 cartridges. Keep in cooler.

Raspberry Compote
Fresh raspberries 1 pint
Raspberry liquor (to taste)
Turbinado sugar (to taste)

Mix berries with liquor and turbinado sugar until lightly sweet.
