Food Truck Fridays: One Love Jerk Grill

Gone are the days of just getting a funnel cake or a corn dog from a food truck. Now the cuisine features food from around the world! For the next five weeks, Good Day Atlanta will showcase an Atlanta food truck every Friday, and they'll be offering food from Jamaica to Vietnam!

Today, Mia and Troy Anglin of One Love Jerk Grill -- which features a Jamaican-American mix -- have a recipe for Curry Chicken with Rice and Beans, and Howard Hsu of Atlanta Food Truck Park and Market spoke with Good Day's Ron Gant about the variety of food teh park has to offer!

Recipe:

Curry Chicken with Rice and Beans
Serves 4-6 adults

Curry Chicken
3 pounds of Chicken
1/2 cup of yellow onion, chopped
1/3 cup of Curry Powder
1/4 cup of olive oil
Salt & Pepper

Heat the oil in a stock pot and simmer the onions until they are translucent. Season the chicken with salt and powder, and add it to the pot. Sprinkle curry powder on the chicken. Cover and simmer for 45 minutes on low heat.

Rice and Beans
3 cups of jasmine rice
2 scallions
1 cup of kidney beans
Salt & pepper (to taste)

Put the beans into a stock pot and cover with water. Add salt and pepper, and cook over low-medium heat for 45 minutes. Add the rice and whole scallions, then cook for an additional 40 minutes.
