PRIME29 Steakhouse and Seafood taste of South Beach

PRIME29 Steakhouse and Seafood in West Bloomfield has a new spring menu featuring some of the great dishes of South Beach, Florida.  Appetizers like Portobello Terrine, Grilled Shrimp featuring caramelized pineapple plus Grilled Artichoke with tomato relish. Continuing with the taste of South Beach, two new salads. The Kale Salad with dried cherries and citrus vinaigrette in addition to our Quinoa Salad, which boasts a delicious combination of roasted corn, toasted pine nuts and a Mediterranean Vinaigrette. Michigan Walleye headlines the new a tray of entree selections along with Glazed Salmon, Pan Seared Scallops and an outstanding Sizzling Seafood Medley.

Prime29 Steakhouse is located next to Plum Market, 6545 Orchard Lake Road at the southeast corner of Maple and Orchard.

Here is the recipe featured on FOX 2 News Morning.

Michigan Walleye
Seasoned flour mixture: (1/2 cup All Purpose Flour with 1/2 Tbsp salt, 1/2 Tbsp white pepper, 1 Tbsp paprika and mix well)

Buerre Monte sauce:
1/4 cup water
1/2 lb butter( diced)
Lemon juice , salt and pepper- to taste
Put the water into a small sauce pan and leave the heat on medium low then slowly whip in the cold butter until the butter is melted
Then add the lemon, salt and pepper mixture

Extra Virgin olive oil sauce:
1/4 cup fresh diced ripe Roma tomato
1 Tbsp cilantro
1 Tbsp parsley
1 Tbsp basil
1/4 cup E.V.O.O
2 Tbsp fresh lemon juice
Salt and pepper to taste

8 oz Walleye fish
Step one: Put the fish skin side down into the flour
Step two: Heat up a sauté pan with medium heat, then carefully place the fish skin side down into the sauté pan for about 2 minutes
Step three: Place the fish into 400 degree oven for 7 min
Step four: garnish the fish with E.V.O.O sauce and topped with Buerre 

Michigan Kale Salad:

1 Quart chopped kale
1/4 cup Chopped Pecans
1/4 cup your favor apple
2 Tbsp Dried Cherries cherry(re-dehydrated)
3 oz Citrus dressing
1 piece maple glaze bacon

Maple glaze bacon:
( choose thick cut bacon and your favor brand in this case)
1 cup maple syrup in a mixing bowl
Brush the bacon with syrup both side, then place the bacon into 325 degree oven for 35 - 40 min, make sure to flip the bacon every 10-15 min until the bacon nice crispy. Place the maple bacon on the top of paper towel let it cool.

Citrus dressing:
Juice from 2 fresh oranges
Juice from 1 fresh grapefruit
Juice from 2 fresh lemons
Reduce all the juice down into syrup and cool in down

1 Tbsp Dijon mustard
1 Tbsp Honey
1 ½ cups Canola Oil
Sugar to taste
Pinch of salt and pinch of pepper
Mix the syrup, mustard, and honey together. Then whipped in the oil, sugar and season with pinch salt and pepper.
