Johnny Prep's homemade fruit salsa and chips

School Snack Salsa

Ingredients:
3 cups tomatoes, cored and cut into large chunks
1 tsp garlic clove, peeled and smashed
1 large serano chili, stemmed, seeded if desired -- and rough chopped
1 Tbsp chicken bouillon concentrate
1 cup fresh cilantro
1 Tsp. salt (to taste)

1. Place all ingredients in a large food processor with a blade.  Process until pureed to the texture of your choice.  If you like your salsa chunky, make sure that you hand cut the hot peppers into a fine dice!

2. If you don't like to much heat, remove the seed and veins from the  chili as well or cut the pepper in half.

Fruit Salsa and Veggie Chips

Ingredients:
1 ripe mango, peeled, seeded and chopped
1 banana, chopped into 1/4 inch cubes
1/2 cup cilantro, finely chopped
1 jalapeno chili, stemmed, seeded and finely diced
1 tsp fresh lime juice
1 bag veggie chips of your preference
salt and pepper

1. In a small bowl, mix together mango, banana, jalapeno, and ciltanro. Gently toss in lime juice and season lightly with salt and pepper to taste.
