Here is the recipe features on FOX 2 News Morning.
2 ripe mango's
1 red pepper
½ red onion
¼ cup copped fresh cilantro
¼ cup rice vinegar
Sea salt to taste
Fresh ground white pepper to taste/ ground red pepper optional, heat
Fresh jalapeno optional / heat
2 bunch fresh cilantro
8 oz coconut oil
Sea salt /fresh ground white pepper
I am using fresh perch for this dish. Any other fresh fish will work
Take three perch with skin off and marinate them lightly in cilantro pesto with a pinch of fresh ground white pepper cumin and sea salt mixed to desired taste.
Heat grille on high and make sure the grates are clean
So the fish will not stick.
Take three 4 inch flour tortillas and set aside
The toppings I will be using are shredded lettuce, casa fresco, mango salsa.
Feel free to use any other desired ingredients.
Now with grille on high and burning clean place marinated perch on grille,
Watch the cooking and turn when fish loose free with tongs, turn and finish cooking
Wile fish are finishing you can now grille flour tortilla lightly to soften and heat
Now lay tortillas on plate
Place shredded lettuce on the tortillas
Place casa fresco atop of the lettuce.
Place grilled fish on top of lettuce and cheese and mango salsa over fish
You now have homemade fish tacos
Then you eat them
