Maccabees at Midtown's Honey Mustard Crusted Salmon

8 oz fresh salmon
2 oz honey mustard
5 oz spring mix
2 oz white wine
4 oz ginger sesame sauce  (see recipe)

Sear salmon on both sides in a hot grill, then cover with honey mustard and cook in a pre-heated oven on 375degrees, for 20 minutes. In a hot oiled sauté pan, place spring mix and white wine sauté for 2 minutes then add the ginger sesame sauce and sauté for 2 more minutes. Place wilted field greens on a plate top with crusted salmon. Garnish with green onions.

Ginger sesame sauce

2 tablespoons rice wine vinegar
2 tablespoons low-sodium soy sauce
1 tablespoon water
1 tablespoon dark sesame oil
