The Stand Gastro Bistro's scallop minestrone

Get this recipe courtesy of Paul Groz, chef and co-owner of The Stand Gastro Bistro, opening in Birmingham on Sept. 30.

Ingredients:
Scallops
White beans
Fava Beans
Corn
Tarragon
Mint
Pasta
Extra virgin olive oil
White wine
Heavy cream
Butter
Micro greens
Salt and pepper

Method:
Sauté scallops medium rare. Have all vegetables blanched.
Reduce wine. Add cream. Reduce. Add butter.
Mix all ingredients into sauce. Arrange on plate. Place scallops on top. Garnish with micro greens.
