Kathleen's Cookies to start serving brunch

Kathleen's Cookies-Desserterie-Uptown Chic
Autumn Frittata

 
Ingredients:
2 T. Butter
1 C. chopped leek (white and pale green parts only)
1/2 C. diced sweet pepper
1 C. sliced brussel sprouts
1 C. julienne zucchini
1 C. sliced, stemmed shiitake mushrooms
2 links chicken apple sausage, sliced
3 oz. diced cream cheese or farmers cheese
1 c. diced fontina or grated pecorino
16 eggs, beaten
1 t. sea salt
Freshly ground pepper to taste
1/4 freshly grated Parmesan
 
Directions:
Preheat over to 375 degrees
 
Melt the butter in a heavy 12 inch ovenproof skillet over medium heat.  Add the leek and sauté until translucent, 4-5 minutes.  Add the remaining vegetables and sausage and sprinkle lightly with salt.  Saute until the vegetables are tender, another 5-6 minutes.
 
Whisk the eggs with 1 teaspoon of salt.  Scatter the cream cheese and fontina cheese over the vegetables in the skillet and pour the eggs on top.  Stir gently to lift the vegetables into the egg mixture and grate some pepper over the eggs.  Sprinkles the top with Parmesan.  Lets the eggs set slightly for 2-3 minutes and then place the skillet in the preheated oven.
 
Bake for 20 minutes at 375 degrees, or until the top is lightly browned and slightly puffed.  The traditional sign that its done is that the edges and top are firm, but when you shake the pan the middle still jiggles slightly.
 
Let frittata set for 5-10 minutes. 
 
Slice into wedges.
