Holiday appetizer: lower calorie spinach dip

Bethany Thayer, a registered dietitian and nutritionist, and director of Center for Health Promotion and Disease Prevention, Henry Ford Health System, has the following recipe to help cut down on the holiday appetizer calories.

Spinach Dip

Ingredients:
1 10-ounce box frozen spinach, thawed
1/2 cup fat-free mayonnaise
3/4 cups fat-free sour cream
1/4 ounce (1 tablespoon) dried onion soup mix
1/2 8-ounce can of water chestnuts, finely chopped
1-2 green onions, finely chopped

Squeeze spinach until dry. In a medium bowl stir together mayonnaise, sour cream and soup mix. Add chopped water chestnuts and green onions. Stir in spinach. Cover and store in refrigerator for 6 hours or overnight. Serve with raw vegetables, cleaned and cut into bite size pieces.

Yield: 2 3/4 cups (11, ¼ cup servings)
