Gluten free fudge brownies recipe

Get this recipe courtesy of HAP Chef Evelyn Stokes. No one will ever guess the secret ingredient that makes these fudge brownies extra fudgy-black beans. These black bean brownies are a decadent gluten free dessert that everyone will love.

Heart Healthy Recipe Gluten Free Recipe

Ingredients
1 can (15 oz) black beans, rinsed and drained
2 Tbsp cocoa powder
1/2 cup quick oats (gluten free if needed)
1/4 tsp salt
1/2 cup pure maple syrup or honey
1/4 cup coconut or vegetable oil
2 tsp vanilla extract
1/2 tsp baking powder
1/2 cup dark chocolate chips
2 to 3 Tbsp confectioner's sugar for decorating, optional

Preparation

1. Preheat oven to 350°. Lightly coat an 8 x 8-inch baking pan with nonstick cooking spray.

2. In a food processor, combine all ingredients except the chocolate chips and the confectioner's sugar and blend until completely smooth.

3. Stir in the chocolate chips.

4. Pour the batter into the prepared pan. Bake for 25 minutes.

5. Transfer to a wire rack to cool completely. Do not cut brownies until completely cooled.

6. To decorate: With scissors, cut a small heart shape out of a 3-inch piece of paper. Place the paper over a brownie. With a sifter, sprinkle the confectioners sugar over the heart shape. Remove the paper. Repeat with remaining brownies.

Yield: 12 brownies
