Captain Jack's Jerk Tilapia

Captain Jacks

Jerk Tilapia With Rice and a Black Bean Salsa
                                                                           
Jerk Seasoning   
All Spice  
habanero peppers    
garlic  
salt 
Chili powder 
chives   
(to taste)

White Rice
4 cups  rice   
1 red bell pepper  
1  celery stalk

Directions:
Pour 4 cups white rice in a boiling pot of water until done. Drain and rinse the rice, then put it directly into a pan on low heat.
Add red pepper and celery chopped small, into the pan. Stir for 2-3 min until hot. Use this as a base for the fish.

Black Bean Salsa
1 cup chopped fresh pineapple 
1 cup chopped tomato
½ cup red bell pepper     
1 can approx. (15oz) black beans drained and rinsed
¼ cup green onion  
¼ cup red onion
¼ cup Cilantro 
½ lime squeezed  
½ lemon squeezed 
teaspoon olive oil

Directions:
Mix all vegetables, pineapple, spices, and black beans in a bowl.
Squeeze the lemon and lime half over the top. Pour 1 tablespoon of olive oil into bowl and stir.
 
                                                                             

Tilapia Preparation 

Pre heat a  sauté pan for 2-4 min  then place oil into pan. When oil is hot,
dry  off and roll an 8oz Tilapia filet in jerk seasoning and place into the hot oil.
Cook 2-3 minutes on each side until fully cooked and golden brown
Place Tilapia onto the bed of white rice. Smother desired amount of Black Bean Salsa across the Tilapia.
Top off with lime zest, salt and pepper to taste.
