Detroit Seafood Market's salmon ala DSM

Get this recipe courtesy of Chef Leonardo Vulagi from Detroit Seafood Market.

8 oz filet of salmon
2 teaspoons of pancetta, finely diced
½ cup diced apples
2 tablespoons brown sugar  
4 oz  apple cider
1 oz olive oil
2 oz fish broth
Salt & pepper to taste

1.Heat up the oil in a large saute pan.

2. Salt and pepper the salmon and sear each side to trap the flavor. Then add the pancetta and cook for 2 minutes.

3. Add the apples, brown sugar, cider, and broth. Cook for 5 minutes or until it starts to thicken.

Serve over Saffron rice.
