Rolling Stoves at the Canton Winter Market

Oven-roasted tomato soup by the Rolling Stoves Food Truck

3lbs Roma tomatoes
2 Tablespoons extra virgin olive oil
salt & pepper
4 garlic cloves
1/4 teaspoon dried thyme
1/4 teaspoon crushed red pepper flakes (or more or less)
4 cups chicken broth

1. Preheat oven to 400 degrees. Lightly spray a large baking sheet with nonstick spray then line with tomato halves, cut side up. Drizzle tomatoes with extra virgin olive oil then season generously with salt and pepper. Roast for 1 hour, or until tomatoes are golden brown and very tender. Cool slightly.
2. Transfer roasted tomatoes to food processor, pulse with garlic until smooth to chunky consistency
3. Pour mixture into a large soup pot then add dried thyme, red pepper flakes, and chicken broth then bring to a boil. Reduce heat and simmer for 20 minutes. Taste and adjust seasonings if necessary.

BBQ pulled pork grilled cheese by Rolling Stoves Food Truck

1 1/2 cups bbq pulled pork
1 yellow onion
4oz sharp cheddar cheese
4tbs salted butter
4tbs mayo
4 slices of white bread

1. Mix butter and mayo together to a smooth consistency and spread on one side of each slice of bread.
2. Place butter/mayo side down on a heated skillet, stacking cheese, bbq pork, caramelized onions, and another slice of cheese.
3. When the bread is crispy, flip to other side to finish the sandwich.

Caramelized onions-
Heat 1 tbsp of butter in a skillet, add sliced onion and cook on a low heat for 30 minutes or until onions are richly brown.
