Meatless Monday: Vegetarian quesadilla with chipotle sour cream

Get this recipe courtesy of Coco Fairfield's in Berkley.

1 flour tortilla
3 oz. mushrooms, sliced
3 oz. red peppers, diced
3 oz. red onion, diced
2 oz. spinach
3 oz. queso cheese, shredded

Chipotle sour cream
1-2 TBS. Chipotle salsa
½ cup sour cream

1. In large pan combine the mushrooms, peppers and onion. Cook over medium heat until veggies are tender, about 3 minutes.  Add spinach and continue to cook until spinach is wilted.
2. Place tortilla in large hot pan or griddle.  Sprinkle shredded cheese over entire tortilla.  Allow cheese to melt, and then add the veggies to half of the tortilla.  Flip opposite side over and continue to grill, flipping once, until tortilla is golden.
3. Allow to cool slightly then cut into four wedges.  Serve with a side of chipotle sour cream

Chipotle sour cream
Combine both ingredients and mix.  Add more chipotle for extra heat.
