Sea Salt Baked Mediterranean Bass,

Ingredients:

Preparation time about 60 mins.

·         One whole Branzino clean and gutted (about 1 ½ Lbs.)

·         1  lemon

·         One fresh rosemary stem

·         One whole parsley stem

·         Extra virgin olive oil 4oz (MANNI Brand Recommended) can be purchased at Tre Monti Only

·         ½ oz. of white vinegar

·         3 garlic cloves

·         Flakes Sea Salt

·         Tasmanian Pepper

·         8 large egg whites

·         8oz. cup of rock or kosher salt

Method:

·         In a small bowl, add (2 oz. of EVOO, ½ oz. of vinegar, half of the parsley minced, one clove of minced garlic, half oz. of fresh squeezed lemon) mix all together. With a brush, brush the inside of the fish with the mixture.

·         Add two cloves of garlic, the remaining parsley, rosemary stem, and the other half of the lemon to the inside of the fish.

·         In a mixer add the egg whites and the salt slowly while its mixing until you create a foam.

·         And a layer of foam to a baking sheet, place the fish on top of the layer, and cover the whole fish with the remaining sea salt foam.

·         Place fish in the oven at 400 F’, for about 45 minutes.

·         Take the fish out, crack the baked salt, place the fish on the plate.

·         Debone the fish if you prefer

·         Drizzle with the remaining of the remaining EVOO
