Sunday Brunch with Joe Muer Seafood

Joe Muer Seafood stops by the Fox 2 kitchen to prepare something off their new Brunch Menu.

Shrimp & Grits with Andouille Sausage and Poached Eggs

Two Shrimp, uncooked and deveined
Andouille sausage, sliced
Cajun seasoning
Two eggs, poached
Swiss chard or any other leafy green vegetable
Etoufee Sauce (see recipe)
Creamy Grits (see recipe)

1. Take two shrimp and rub them in Cajun seasoning and oil. Drop into a
hot sauce pan along with sliced Andouille sausage.

2.Once the shrimp are cooked through, add Etoufee sauce into the pan and
heat it through.

3. A leafy green vegetable like Swiss chard or broccolini compliment this
dish quite well. Saute them in butter and garlic until cooked. Place on
top of the sauce.

4. Add some creamy grits and two poached eggs on top of the greens and
place the shrimp alongside them. Enjoy!

Etoufee Sauce:
Two red bell peppers, small dice
Two onions, small dice
Four celery stalks, small dice
1 Tbsp Olive Oil
Three quarts shellfish stock

2 Tbsp garlic, minced
1/4 cup tomatoes, whole peeled
1 cup flour
1/4 cup butter
Cajun seasoning to taste
Salt and pepper to taste
Cayenne pepper to taste

1. Saute the vegetables in olive oil until cooked through. Add garlic and
tomatoes and until the garlic is browned. Add both the shellfish stock
and seasonings and bring to a simmer.
2. While the sauce is simmering, create a roux by combining the flour and
butter in a saute pan and cook through. Allow this to cool down.
3. Once the roux is cooled, add it to the sauce and whisk thoroughly. The
sauce should take on a much thicker consistency. Let the sauce cool down
and rest overnight to allow the flavorful ingredients to combine.

Creamy Grits:
4 cups water
1 cup grits
2 cups shredded cheese, preferably white cheddar
Salt and pepper to taste

1. Bring the water to a simmer. Once heated, add grits and whisk
thoroughly. Cover the grits and allow to cook for fifteen minutes on very
low heat, whisking occasionally.
2. Once the grits are fully cooked, add shredded cheese and any
seasonings that fit your taste. Whisk thoroughly.
