Good Day Cafe: Jersey corn & black bean salsa

Owner Bob Sickles and sous chef Shuan Kozlak of Sickle's Market in Little Silver, NJ, prepared Jersey corn and black bean salsa.

Recipe:

Jersey Corn and Black Bean Salsa:

4 ears of Jersey corn (peeled, grilled and cut from the cob)

1- 15oz can of black beans (rinsed)

1 red pepper (seeded and cut in small dice)

1 yellow pepper (seeded and cut in small dice)

1 medium red onion (cut in small dice)

½ teaspoon cumin

½ teaspoon coriander

1 chipotle pepper (chopped fine) more if you like it spicy

2 limes (juice and zest)

¼ cup Mirin

½ cup oil (Canola or vegetable)

1 Tbsp. chopped Cilantro

Salt and pepper to taste

Preparation:

Prepare corn as above

Prepare onions and both peppers as above

Chop cilantro

Add to bowl with black beans

In a small pan toast cumin and coriander over medium heat, until there aroma fills your kitchen

In a separate bowl mix chopped chipotle pepper, lime juice and zest, Mirin, oil, salt and pepper and toasted spices

Toss with corn mixture adjust seasonings as needed

Enjoy with your favorite chip or top your favorite chicken, pork or fish dish with the salsa.
